Nanaimo Bars…recipe by Hollis

Base:
1/2 cup (115g) butter
5 Tbsp (40g) cocoa
1/4 cup (60g) white sugar
1 egg
2 cups Granita/Digestive biscuit crumbs (1 package biscuits)


Filling:
2 cups icing sugar
1/2 cup (115g) butter, softened
1/4 cup milk
3 heaped Tbsp custard powder

Topping:
100-150g good quality dark chocolate
1 tbsp butter
1-2 tbsp vegetable oil (eg peanut oil)

Melt together butter, cocoa and sugar over low heat. Stir until smooth.
Break in egg and stir well.
Remove from heat and add biscuit crumbs.
Mix well, press into lightly greased pan and chill.

For filling, cream butter, then gradually add icing sugar, milk and custard powder. Spread filling on top of base and chill.

Melt chocolate with butter and oil and pour on top, carefully spread to edges and smooth. Bang the pan against the counter a few times to get a nice smooth surface. Refridgerate. Cut into squares and enjoy!
