- Serves 4
- 1 1/2 cups water
- 1 cup coconut milk
- 1 1/4 cups jasmine or long-grain rice
- Place water and coconut milk in a saucepan and bring to the boil.
- Add the rice, return to the boil, then reduce heat to medium and stir well.
- Cover and cook for 20 minutes. Remove from heat and set aside, covered, for 5 minutes. Drain and fluff with a fork.

- Coconut rice is delicious served with a thai curry.

It is the some of the most amazing food I've ever had, including a kick-butt coconut rice. (As a side note, Portland is one of my favorite food cities in the world! Who knew?) Definitely worth a stop if you find yourself on the west coast of the USA.
